Course overview
This course offers a scientifically exploration of nutritional and lifestyle strategies to optimise blood glucose levels. Grounded in clinical and physiological principles, it addresses the impact of glycemic index, intact grains, starch retrogradation, and dietary fibre on glucose regulation.
Participants will examine how food structure, preparation, and combination with fats, protein, or acid influence glucose absorption and insulin response. Emphasis is placed on reducing postprandial glycemic variability through behaviour-focused interventions such as slower eating pace and light post-meal activity.
Each of the ten strategies is supported by recent peer-reviewed research, with practical guidance for implementation in patient education or personal health management. This course is ideal for dietitians, diabetes educators, and allied health professionals seeking a deeper understanding of modifiable glycemic factors for improved long-term metabolic outcomes.

Lucinda has always considered herself as a “fixer”. Finding solutions for nutrition-related problems for better outcome and improving quality of life is her mission. She has a holistic way of thinking and believes that paediatric conditions should all be treated in a team of healthcare professionals, where nutrition forms the foundation of each treatment plan.
Lucinda is registered with the Health Professions Council of South Africa (HPCSA), Association for Dietetics in South Africa (ADSA) and the Southern African Academy of Childhood Disability (SA-ChilD) which is a member of the International Alliance of Academies of Childhood Disability (IAACD). She feels privileged to be part of PICNNIC (Promoting International Collaboration for Nutrition in Neurological Impairment in Children) and the first member from Africa to join this team of international experts.
Lucinda has been a registered dietitian for 15 years. She completed her Master’s degree in dietetics, particularly in the field of paediatric cerebral palsy. Her career path has moved from working in the government sector to the private sector, as well as gaining experience from the pharmaceutical industry. She has been involved in special needs nutrition and it has been one of the most fulfilling purposes in her life. Whether it is a parent, facility or healthcare professional seeking advice, she will go beyond great efforts to assist with the best possible solutions to ultimately reach their goals.
Her practice, Neuro-Nutrition, has become more focussed on presenting workshops and courses for both public and private sectors on various topics related to paediatric nutrition. She also serves as an expert medico-legal witness in medical malpractice litigation. Her heart lies in the fields of both neuro-disabilities and critical care for the paediatric population.
